There are simple steps we can take each day (and encourage our networks to do the same) to help reduce our personal carbon footprint! Check out these simple suggestions from our board member Elisabeth Gick.

Eating a vegetarian diet has suited me well physically and ethically for more than years; now, however, I am thinking I could do a lot better by Mother Earth if I let go of all that yummy cheese and the eggs for my pancakes. It’s time to go vegan!

I am not there yet, but getting more skillful at it by doing a bit more food planning and reading recipes. Let me share one from fellow 350 CO Board member Miranda Glasbergen; she brought this dish to our meeting and it was a hit!

Cauliflower Rice Salad 
  1. Rinse cauliflower, divide into big chunks, toss in the food processor and blitz to make the “rice.”
  2. Cut up bell peppers, tomatoes, and whatever else you fancy.
  3. Add curly parsley.
  4. Add some corn (canned or from the freezer).
  5. Add salt, pepper, and a lemon juice & olive oil dressing.
  6. Eat right away or refrigerate overnight for the flavors to mingle.

Once you are finished eating your salad, make sure you dispose of your organic waste properly….

Putting biodegradable items in the compost bin instead of the trash is one of the easiest and most effective first steps you can take to reduce greenhouse gas emissions.

It also turns what would be “garbage” into a nutrient-rich soil amendment that restores our farmland and promotes sustainable agriculture. Not bad for one little bin!
